When scooping out potato centers, use a grapefruit spoon. It makes quick work of that task !

I love twice baked potatoes. I buy a bag of large potatoes and take a afternoon to do twice potatoes and freeze them. . And all I got to do is pull out ahead of time to thaw out and cook !

Try adding diced deli ham to your potatoes filling. So good. Everything looked delicious.

Hey Mel, I love all the recipes & a little bit crispy is the perfect kind of bacon in my book! Love the mini twice baked potatoes & the Monterey Chicken too! There's a restaurant here that does a Monterey Chicken with Onions, Green Peppers & Mushrooms with Monterey Cheese, but I love the Tomato & Bacon idea! Thanks again for the great recipes! Monterey chicken was my go to at Chili’s so yes they used whole pieces of bacon and I think it was under the cheese! I have not made in awhile need to had to my dinner menu 😊
