    請問肥妈為什麽一直戴上手套煮餸?有時上酒楼用膳見傳菜人一直戴上又黑又髒的白棉布手套,非常不衞生!個人反而希望餐飲從業員在不是受傷或皮膚過敏的情況下徒手工作!勤洗手!因為手髒了人人都會去洗手!手套很髒了还是不洗換的大有人在!十分感謝肥媽及團隊辛苦為我們搜羅各式美味又不太艱難的食譜!👍👍👍🙇💖 就算不煮,看着吞口水也是一种享受!😄

    肥媽 Maria Cordero YouTube Live – June 26, 2021 Recipe English Version One Pork Tenderloin – 2 Ways Recipes 1 – Simple Stir Fry Pork Tenderloin with Mixed Vegetables (YouTube video starts at 5:20.) Ingredients: Pork tenderloin - Trim the fat, white membranes, and put them aside. Cut the rest into cubes and add in marinade ingredients, as listed below.) Jicama - 1/3 (Cut into cubes.) Carrot - 1 (Cut into cubes.) King oyster mushroom - 1 (Cut into cubes.) Red sweet bell peppers - Cut into cubes. Minced shallots - 2 ½ cloves Minced garlic - 2 ½ cloves Mince ginger - a pinch Onion, optional Cashew nuts, optional Marinade pork tenderloin ingredients: Sesame oil Shaoxing wine Light soya sauce Sugar Corn starch Seasoning ingredients: Sesame oil Shaoxing wine Light soya sauce - 1 tbsp White pepper Sugar - ¼ tsp Oyster sauce - 1 tbsp Mushroom powder, optional Methods: 1. Heat up a wok, add in the fat, white membranes, and stir fry until fragrant and pork fat has released. 2. Add in ½ clove of minced shallot, ½ clove of minced garlic, marinated pork tenderloin, and stir fry until fragrant and transfer to a plate. Set aside. 3. Add oil to the wok and 2 cloves of minced shallots, 2 cloves of minced garlic, minced ginger, carrot, and king oyster mushroom. 4. Add in all the seasoning ingredients. 5. Add in red sweet bell pepper, return the cooked pork tenderloin back to the wok, and mix well. 2 – Baked Mushroom Pork Tenderloin Roll in Air Fryer with Apple Sauce (YouTube video starts at 40:00) Ingredients: Pork tenderloin - Slice sideways into a thin layer on a cutting board into ONE thin piece. Place a plastic wrap on top and pound lightly with a meat tenderizer into an even layer. DO NOT tear meat. Marinade pork tenderloin ingredients: Salt Black pepper Filing ingredients: Fresh mushroom - Cut into small pieces. Minced shallots - 2 cloves Minced garlic - 2 cloves Garlic-salt White pepper Mixed herbs Shredded cheese Apple sauce ingredients: Red apple - ½ (finely grated) Apple cider vinegar - 2 tbsp White pepper - to taste Garlic-salt - to taste Sugar - to taste Water - ¼ cup Light soya sauce - to taste Corn starch - ½ tsp and water to thicken the sauce (to be added last) Methods: 1. Preheat air fryer at 200C (392F) to avoid dry tough meat. Remove air fryer liner while preheating because the liner will float to the top of the air fryer basket. Use the liner only when there is food on top. Or preheat oven at 230C (446F). 2. Marinate both sides of the pork tenderloin with salt and black pepper. Set aside. 3. Heat up a pan, add oil. Add in minced shallots, minced garlic, fresh mushrooms, garlic salt, white pepper, mixed herbs, and stir fry until fragrant. Transfer to a plate and sprinkle shredded cheese on top and mix well. Set aside to cool to room temperature. This is the filing. 4. Split filing into 3 portions. 5. Add the 1st portion of the filing to the bottom part of the marinated pork tenderloin and roll over once and make sure all filling is enclosed. 6. Add the 2nd portion of the filling to the top of the first fold and roll over once to make sure all filling is enclosed. 7. Add the 3rd portion of the filling to the top of the second fold and roll over once and make sure all filling is enclosed. 8. Shape into a log, secure with 4 cooking strings spread out evenly, and sprinkle more black pepper on top. 9. Heat up a pan to very hot, and add oil. Sear all 4 sides of the pork tenderloin roll to lock in the juice. 10. Transfer seared pork tenderloin to the air fryer LINED with liner and bake for 15 minutes or 20 minutes in an oven. 11. Heat up a pan, add in all the sauce ingredients and mix well. Taste test and thicken the sauce with cornstarch and water. 12. Slice baked pork tenderloin roll into round pieces. Remove kitchen strings. Removing kitchen strings before slicing will risk having the roll come apart. 13. Ingredients: Prawns - 10 (Defrost and cook as soon as possible to avoid the darkening of shells. Trim off legs, heads, and pat dry. Coat each a thin layer of corn starch to avoid spitting oil.) Seasoning ingredients: Minced shallots Minced garlic Minced ginger Butter - 1tbsp Evaporated milk - ½ can or regular milk Salt - 1 tsp Sugar - ½ tsp Water - ¼ cup Corn starch - 1 tsp Mushroom powder - a pinch White pepper - a pinch Garlic-salt - a pinch Fresh Thai basil or curry leaves (leaves only) Fresh green and red chilis (sliced) Garnish ingredient: Fresh Thai basil (leaves only) Methods: 1. Heat up a wok, add enough oil for deep frying. Avoid olive oil due to low smoke points. 2. Add in prawns and deep fry until cooked on HIGH heat. Transfer to a plate. Set aside. 3. Pour out prawn-flavoured oil. This oil can be used for other stir fry or lo mein noodle dishes. 4. Heat up a wok and add prawn oil. Add in minced shallots, minced ginger, minced garlic, and stir fry until fragrant. 5. Add butter and ½ can of evaporated milk, salt, sugar, water, corn starch, mushroom powder, white pepper, garlic salt, and mix well. 6. Return the cooked prawns back to the wok, add fresh Thai basil, fresh green, and red chilis, and mix well. 7. Transfer to a serving plate. Garnish with fresh Thai basil. Egg - 2 Instant oatmeal - 4 tbsp or replace with 2 tbsp all-purpose flour Black sesame seeds Serve with Ice cream Methods: 1. In a mixing bowl, add in ripe bananas, eggs, instant oatmeal, and mix well into a smooth batter. 2. Best to let the batter rest for a while. 3. Heat up a pan and add oil on LOW heat. 4. Scoop a ladle full of batter into the pan and spread out evenly with the back of the ladle in a circular motion. 5. Sprinkle sesame seeds on top and pan-fry until golden brown on both sides. Cover pan with a lid to cook evenly. 6. Continue with the remaining batter. 7. Transfer to a serving plate and serve with ice cream.
