Beef Larb
1 1/2 lbs ground beef
3-4 tbsp rice powder
2 1/2 tbsp fish sauce
1 tbsp chili powder or 2-3 finely diced Thai chilis
2 tsp sugar
2 1/2 limes juiced
30 mint leaves
20 cilantro leaves
20 Thai basil leaves
3 spring onions sliced
2 shallots thinly sliced
Cajun Roux:
1 cup neutral oil
1 cup + 2 tbsp all-purpose flour
Dirty Rice:
1 1/2 lbs 80/20 ground beef
1 tbsp neutral oil
2 tsp cumin
1 tsp chili powder
1/2 tsp cayenne or other spicy chili pepper
1/2 tsp black pepper
1 1/2 tsp kosher salt
7 sprigs stripped thyme
3 cloves sliced garlic
1 cup green bell pepper medium dice
1 cup yellow onion medium dice
1/2 cup celery medium dice
1/4 cup dark cajun roux
2 cups chicken stock
4 cups cooked white rice
Garnish with thinly sliced green onions

Meat Filling:
1/2 large yellow onion
1 1/2 lbs 80/20 ground beef
3 garlic cloves finely grated
2 tbsp finely chopped Italian parsley
1 tbsp onion powder
2 tsp smoked paprika
1 tbsp toasted and ground cumin
1 tbsp toasted and ground coriander
1/2 tsp cayenne or other spicy chili peppers like chili flakes
1/2 tsp turmeric powder
1/2 tsp allspice
2 tsp kosher salt
1 tsp black pepper
Yogurt Sauce:
1 cup yoghurt
2 tbsp tahini with 1 tbsp warm water
Juice of 1/2 lemon
2 garlic cloves finely grated
1/4 tsp coriander
1/4 tsp cumin
Big pinch of salt

What's up, dude! I was told by my butcher that ground beef is just all the left over trimmings when they butcher the animal into clean cuts/portions. It all gets ground together and you end up with the ground beef. Sometimes it's fattier, sometimes it's leaner. I love that about ground beef. It's so versatile. Dirty rice is one of my favorite dishes. I use 50/50 ground beef and sausage. I make dirty rice stuffed bell peppers with the leftovers!

I'm from the New Orleans area and can confirm Hum Bruh is a saying that can mean many things. It can mean disappointment, it can mean yes, it's a lot of things. You used it perfectly in your video. Hum bruh!!! A little tip on the roux should be equal parts by weight and not equal parts by volume. This will make your roux thicker, but hey, whatever works for you, do it!

Finally, someone who has the proper ratio of rice to water!!! The directions on the bag always yield soggy, sticky, mushy rice. Thank you for getting it right, and for not using an InstaPot or rice cooker.
